lunch to go

I've made these a couple of times over the past week. It's my new favorite sandwich:

carmelized yellow onions
apples (tossed in lime juice)
swiss (I've also done it with cheddar...I like that even better)
grain bread
mustard (two kinds...horseradish mustard on one slice, honey mustard on the other slice)

...........all pressed on the panini grill.

Tastes great warm, but decent at taken to go and eaten at room temp, too.
